Seggiano’s artisan Colomba is the traditional dove-shaped cake that sits at the heart of an Italian Easter table — a symbol of peace, hope and renewal. Light, fragrant and naturally leavened, this is the slow version, made without industrial additives or trans fats.

The dough begins with a 40-year-old mother yeast, left to ferment overnight to develop depth and that signature airy texture. The following morning, it’s enriched with a second dough made using local honey, organic eggs and butter, real vanilla and sulphite-free candied orange peel. After two further rises, it’s finished with a classic crunchy almond glaze scattered with whole nuts before baking.

The crumb is soft and tender, gently scented with citrus and vanilla, with just enough sweetness to feel celebratory without tipping into excess. Slice thickly and serve with coffee, dessert wine or simply as it is.

Material: Candied orange (orange, caster sugar, glucose syrup, vanilla infused from vanilla pods), WHEAT flour, BUTTER, sugar, fresh organic EGG yolk, Italian ALMONDS, orange peel, Italian acacia honey, orange syrup (caster sugar, orange peel, Italian acacia honey), lemon peel, sea salt, BARLEY malt, vanilla infused from vanilla pods. Icing: caster sugar, fresh organic EGG yolk, Italian ALMONDS, cold pressed sunflower oil, rice flour, WHEAT flour, HAZELNUT paste (100% hazelnut content).

Care: Store away from heat & light. Once opened reseal to maintain freshness & consume within 4 days.
