Pistachio Pesto

Seggiano’s Pistachio Pesto is made with over 50% pistachios, blended simply with extra-virgin olive oil, a touch of chilli and salt. Just four ingredients, handled well. The result is naturally rich and creamy, with that buttery sweetness pistachios are known for, sharpened gently by heat rather than overwhelmed by it.

The texture is smooth but not soupy, with enough body to cling to pasta or sit confidently on a spoon. Toss it through linguine for something quick but deeply flavoured, spread onto crostini, or serve as part of an antipasti plate alongside grilled vegetables and good bread.

It’s naturally gluten-free, vegan and suitable for coeliacs, but more importantly, it tastes generous and balanced. Nutty first, then olive oil warmth, then that quiet chilli lift at the end.
